The quality of the cooking at the Sun Inn depends on the raw ingredients we use – which is why we work with the best suppliers across Scotland to bring you the diverse and exceptional tastes of our wonderful country.
Scotland is justly famous for its seafood and at the Sun Inn we work with one of Edinburgh’s leading fishmongers to source the best fish from Scotland’s rivers, lochs and sea. Welch’s is a family-run firm based in Newhaven in Edinburgh. Welch’s expert buyers make their selections as soon as the fishing boats unload their catches at each of Scotland’s leading fish markets. Our close relationship with Welch’s means that we can feature the freshest Scottish seafood on our menu; then we cook it with the lightest of touches, to bring out its unique flavours.
JOHN GILMOUR BUTCHER
One mark of a great gastropub is the taste of its steaks and, if there is one thing that the Sun Inn won’t compromise on, it’s the quality of the meat we buy. To ensure that we use the best meat available, we only buy from John Gilmour, a butcher based near Edinburgh, well-known as a perfectionist. John Gilmour concentrates on carefully-selected, high-quality beef and lamb, mainly purchased at the St Boswells livestock market in the Scottish borders. This means we know exactly which farm the meat we use has come from – and we’ll let you know on our ‘local heroes’ blackboard.
At the Sun Inn we love it when Michael from Wild Tastes turns up in his van and we get to see his latest culinary discoveries. Wild Tastes is a specialist food company that supplies the best of Scottish produce, including wild game, wild mushrooms and the best of Scottish cheeses. Wild Tastes sources all of its venison and other game from Scotland’s great sporting estates and supplies the cream of Scotland’s restaurants with this wonderful produce. The company, which has been running for over 12 years, is committed to helping as many people as possible experience the true taste of wild Scotland – a project the Sun Inn is only too happy to be a part of.
George Anderson & Sons is one of Scotland’s leading distributors of fresh produce. The company operates out of a purpose-built warehouse just outside Edinburgh in the Heart of the East Lothian countryside, surrounded by some of the best growers in Scotland. Anderson & Sons supply us with the cream of this local produce, including field-fresh fruit and vegetables. Established for over 40 years, the company is still very much a family business, and now is safely in the hands of the third generation of the Anderson family.
One of the true tastes of Scotland is its smoked fish. That’s why we are delighted to have a long-standing partnership with the Belhaven Smokehouse, which is situated on the edge of the John Muir Country Park, near Dunbar. The smokehouse supplies us with a wide range of locally-sourced and home-produced products, including fresh and smoked trout from its own fish farm, and fresh and smoked salmon from Shetland.
We get our beer from Stewart Brewing, Edinburgh’s only independent brewery. The company produces stunning beers and also shares the Sun Inn’s commitment to quality, innovation and great taste. Stewart’s is committed to using only the finest raw materials. It brews all of its beers to unique recipes in small batches. The core range includes award-winning Edinburgh Gold, Pentland IPA, Copper Cascade, Edinburgh No 3 and Stewart’s 80/-. These are joined by various limited edition releases throughout the year. These delicious brews are distributed to a select number of independent pubs and businesses in and around Edinburgh and the central belt. Come and try them next time you visit our bar.
Bob Webster at Gosford Farm supplies us with a range of local produce, including seasonal game, locally-sourced meat, vegetables, bread, free-range chicken and organic eggs from the Gosford Farm estate. At the heart of his business is Bob’s herd of wild boar which forage in Gosford Woods. These beautiful animals exemplify the spirit of his meat and farm shop business.
